Description
Rice is the staple food of the Hakka people in Taiwan, from farming to festivals. The sauce and pickles produced by the historical conditions and the background of life are indispensable to decorate the taste of Hakka. This project is not an exploration of the technical aspects of food production. This project is not about the technical aspects of food production, but about the cultural aspects of the Hakka rice and pickle culture in Taoyuan and Hsinchu. The project uses in-depth interviews, field observations, and on-site photography to document the culinary techniques. The first year focused on the Taoyuan area, and the second year extended to the Hsinchu area.
